125g unsalted butter
1/2 cup caster sugar
1 tsp vanilla
1 1/2 cups sifted self-raising flour
A pinch of salt
Preheat oven 180'C and line baking tray with baking paper.
Melt butter in a saucepan until a pale golden brown, cool slightly and add sugar. Beat in egg, vanilla, sifted flour & salt.
Roll walnut sized pieces of dough into a smooth ball and place on prepared tray. Press each ball to flatten slightly.
Bake in preheated oven for 15 minutes or until golden brown then cool.
Top with coloured icing and sprinkles.

125grams of melted butter
(microwave about 1-minute MED )
2 eggs ( beaten )
1 teaspoon of vanilla
Preheat oven ( fan forced) to 180'C
Line 12 x 1/3 cup capacity muffin pan with large paper cases
Combine flour and sugar in a bowl. Make a well in the centre
Combine melted butter, milk, vanilla and eggs and add to flour mixture,
stirring gently to combine
Spoon mixture into paper cases
Bake for about 12-15 minutes, or until a skewer inserted
into the centre of the cake comes out clean
When cool, ice cupcakes ( Makes 12 )
